Sweet Potato Delight ( raw )

Hello Brenda.
Thank you for putting up this wonderful website to help people conquer Candida...such great information for everyone. Eating well means tasty, delicious, sustaining foods. This recipe does have a little maple syrup for sweetening, but not much, and it does add such a wonderful flavor. Hope you like it.
2 sweet potatoes/ grated
juice of 1 to 1 1/2 limes ( to taste )
2 inch piece of fresh ginger, grated
1 tbsp maple syrup
1/2 cup chopped fresh mint
1 cup dried sweet cranberries
pinch ground cloves
1 tsp ground cinnamon
Peel sweet potatoes and ginger, grate with a hand grater or food processor grating insert. Add lime juice and maple syrup, chopped mint and cranberries, mix and allow to marinate for at least 30 minutes. Garnish with fresh mint leaves. Substitute pomegranate seeds instead of cranberries for an interesting taste difference.
